My ultimate comfort food comes in the ethnic cuisine called "Gallo Pinto," or "Spotted Rooster."  Now, there's nothing rooster about this dish, so I don't know why it's called that, but in Costa Rica, this dish is served for breakfast, lunch, dinner, and snacks.  I love it!
Here's how you make it: Cook some brown rice.  In a sauce pan, saute some chopped onions with oil, about 2-3 Tbsp worcestershire sauce, a few shakes each of ground ginger, corriander, ground cumin, garlic powder, salt & pepper until onions are translucent-ish.  Add a can of black beans and cook for several minutes until heated through.  Add the rice and stir everything together.  Serve with fresh chopped cilantro and sour cream!  You can also add chopped cooked chicken or ground beef, or your meat of choice.
