Thanksgiving Eve has found me baking in the kitchen til midnight! The butterscotch pudding is now cooling before I pour it into the gluten free pie crust!  I made two pudding pies-- the other is chocolate-- and there was enough crust left over to make a few tarts.  I love digging into the back of the freezer and pulling out the random what-in-the-world-is-it and defrosting... mango! So I baked cinnamon mango tarts, as well as a loaf of gf bread! I love Thanksgiving!

With the sunshine blazing across a breezy autumn sky, I decided I could not allow the day to pass by without enjoying the freshness of it!  Duncan and I meandered around a local park we'd never visited before and enjoyed the leaf strewn trails.


I think this should be our Christmas photo. What would people say if they only got a photo of my dog?

It's another new recipe night!  The meal of choice this evening is Moroccan Chicken with Black Beans (it's supposed to be lentils, but I only had black beans) over quinoa and a bed of fresh greens.  Recipe to follow.

This is what happens when gravity gets the best of a poor hand grip.  *sigh*  Yes, this is also why there have been no posts for a week-- my computer is dead without it's power cable and I just procured one this morning.  I was looking at a $70 cable that I got for free from a friend's computer-guy husband!  God cares about the little things, too.

This is a shout out thank you to all the veterans and military personnel who have served our country so we can have freedom!  Eyes are on downtown Portland this weekend as the Occupy Portland folks are supposed to leave the parks at midnight on Saturday.  This group has been able to assemble and peacefully protest due to the sacrifices of those who have fought for us.


This would have been a better photo had I actually been in the vicinity, however, I'm content watching from the internet!

I was just kidding about the previous Mr. Darcy.  This is actually the Mr. Darcy of Pembervasely.  The first Mr. Darcy was a fail, if you know what I mean.  The amazing thing about Mr. Darcy II is that we've already connected and we've only known each other for a few hours.  Here's to a long, happy life in Pembervasely!

After being diagnosed with food allergies almost four years ago, I decided to eat healthier and be more aware of what I'm putting into my mouth.  As as result, I've lost 15 lbs and feel better than ever, cooking amazing fun foods, and eating way more fruits and veggies!  Our bodies need 9-13 servings of fresh fruits and vegetables every day, but who eats that much?!  I'm into whole foods (natural and preservative free), fresh and organic (when I can).  I've added Juice Plus+ to my diet-- a product that contains the essential micro-nutrients of 17 different fruits and vegetables in a capsule (or gummy).  So, even the days I don't get many fresh items, I know that I'm getting the essentials my body needs.  My immune system has never been so strong and recovery from workouts has taken probably half as long as before.  If your interested in learning more, check out the website: www.livingwaterartsjuiceplus.com.  I love talking about nutrition and health!

I spent the evening on the East side volunteering for an event for Africa New Life Ministries-- an organization in Rwanda building schools and starting churches, providing sponsorship for children to go to school, teaching women skills (like sewing) to support their families, etc.  The group started in Portland by Charles Mugisha Buregeya ten years ago.  Check out their website: www.africanewlife.org!
